Anjan Chatterjee, founder of Speciality Restaurants, expressed the chaos in the industry, stating that many are desperately seeking solutions. He emphasized that the most vulnerable workers will be the first to suffer if restaurants cannot sustain their operations. Kirit Budhdev from the Federation of All India Caterers highlighted the worsening situation, noting that suppliers are extending wait times for deliveries, which complicates matters for many caterers. In Pune, restaurant owners report that many smaller establishments have already ceased operations, with suppliers prioritizing other sectors like healthcare over food services. Street food vendors in Madhya Pradesh are also facing challenges, as the shortage of commercial gas cylinders disrupts their ability to serve customers, forcing them to limit their hours or close altogether.
Turning Towards Alternatives
In response to the LPG crisis, some businesses are exploring alternative cooking methods. Rashmi Daga from FreshMenu mentioned that they are considering options like firewood, induction, and electric stoves. However, transitioning to electric cooking equipment poses its own challenges, especially with the potential for power cuts during the summer months. Interestingly, some villages in Madhya Pradesh have found a solution by adopting biogas systems that convert cattle dung into cooking fuel. Residents in these areas report that this method provides a reliable fuel source with minimal daily maintenance, allowing them to continue cooking without the disruptions faced by others reliant on LPG.
Uncertainty and Outlook
The outlook for the food services sector remains uncertain as industry stakeholders grapple with ongoing supply issues. Although there have been slight improvements, significant gaps in LPG availability persist, leaving businesses in a state of flux. Anjan Chatterjee reiterated the volatility of the situation, expressing hope for a resolution but acknowledging the challenges faced by local eateries. Rashmi Daga echoed these sentiments, stating that the inability to plan for perishable goods without guaranteed gas supply adds to the industry’s woes. The All Assam Restaurant Association has called on the state government to ensure a dedicated supply of commercial LPG for the hospitality sector, warning that continued shortages could lead to widespread closures. As the crisis unfolds, the future of many restaurants and food services remains precarious.
