For many locals and food lovers, this acknowledgment was long overdue, with celebrity chef Ranveer Brar expressing that it should have happened sooner. The recognition shines a spotlight on Lucknow’s culinary identity, which has always been integral to its cultural fabric.

The Culinary Heritage of Lucknow

Known as the City of Nawabs, Lucknow boasts a rich culinary history shaped by its 18th and 19th-century Muslim rulers. The royal kitchens were centers of innovation, merging Persian and Indian cooking styles to create the renowned Awadhi cuisine. Among the city’s culinary treasures are the famous mutton galouti kebabs, crafted to cater to an aging nawab who could no longer chew. These kebabs are a testament to the city’s culinary ingenuity, made with finely minced meat mixed with spices and papaya for tenderness. Another hallmark of Lucknow’s cuisine is the Dum Pukht cooking technique, which involves slow-cooking food in sealed pots to enhance flavors. Chef Brar advocates for raising awareness about Lucknow’s lesser-known eateries, emphasizing that each dish tells a story shaped by generations of culinary expertise.
